No Man's Sky has 18 quin- ugh. It has infinite planets, okay? You can't visit them all, so let's just say infinite. Each one is unique in how it developed, grew, and sustained some form of life (hopefully). The flora and fauna are supposedly generated in response to how the planet developed. So, for sake of argument, each planet is unique. Oh, and they're the size of actual planets. Like, Earth-like planets. Meaning the planet we're on. The planet that has billions of people who still find new things about the planet thousands of years after founding the concept of exploration. So it comes as literally no surprise that a select few No Man's Sky players have stuck to their little starter planets permanently.

Can you blame them with planets like this?

No Man's Sky, even with a lack of multiplayer, gives players an insane amount of content. Most likely, players could spend their entire careers on one planet, fully conquering the entire thing. Even so, there will be sights and areas of the planet that will always remain untouched. Either way, anyone blasting off from their starter planet will always know that there's a chance its hidden secrets will never be discovered. 100% completionists beware.
