According to Nintendo's FAQ section for the service, Gold points can be redeemed for an initial subscription, but not for a renewal.

Nintendo Gold points are the company's new-ish reward program. You earn these points by making purchases on Nintendo items, such as games. One point equals one cent USD. Digital purchases reward with 5% of the sale, with physical at 1%. so a digital game purchase at $30 would reward you with 150 gold points. At the same 1 gold = 1 cent rate mentioned previously, you can redeem these points for a discount on purchases.
With Nintendo Switch Online priced at $3.99 for one month, $7.99 for three months, or $19.99 for an entire year, we can assume that it'll cost about 400, 800, or 2000 Gold points accordingly. Though these numbers have not been confirmed by Nintendo.
